Tomato, Quinoa & Bacon Soup

Warm up those winter chills with this yumcious tomato and quinoa soup (it has bacon too!)

  • Preparation Time: 04:00


  • 3 tbsp olive oil
  • 1 tbsp Soya sauce
  • 1 clove garlic, grated
  • 1 large onion, chopped
  • 3 large tomatoes, chopped
  • 1 punnet cherry tomatoes, cut in half (200g)
  • 1 tin chopped tomatoes
  • 1 bunch celery, chopped (exclude the leaves)
  • ¼ cup quinoa
  • 500ml chicken stock
  • 4 rashers bacon
  • 5 basil leaves
  • Salt & Pepper


  • 1In a large pot, heat up the olive oil
  • 2Add the soya sauce, garlic, onions and celery and simmer
  • 3Now add all the tomatoes – fresh and tinned, the stock and the quinoa
  • 4Allow this to boil for about 35 minutes – or place it in a Wonderbag or a slow cooker for about 3 hours
  • 5Blend the soup with a handheld blender
  • 6Separately fry the 4 rashers of bacon
  • 7Top the soup with bacon, a few basil leaves, salt and pepper
